Crock Pot Split Pea & Ham Soup

Ingredients

2 cups yellow or green split peas (or a mix!)1/2 cup pot barley1 ham bone OR 1 cup cubed ham (1cm or 1/2 inch cubes)2 tbsp extra virgin olive oil1 med cooking onion, diced2 med stalks celery, chopped2 garlic cloves, minced2 med carrots, coarsely grated2 sml potatos, coarsely grated1 bay leaf7-8 cups of water (start with 7)salt to taste (ham is already salty, cut back)pepper to tastethyme to taste
Sauté the onion, celery and garlic in the oil and transfer to the bottom of the crock pot.
Add the remaining ingredients and cook on HIGH heat for 6-8 hours. (Or, HIGH for 4 hours, MED for 4 hours if your pot is programmable.)
Stir occasionally (if you're home!) and add a little hot water if needed to keep the preferred consistency.
Remove the ham bone!
Serve with fresh biscuits :)
