Ingredients
3-4 tilapia filets1 can italian diced tomatoes2-3 cups yellow and green zucchini1 small onion - thinly sliced1 tablespoon olive oil or olive oil cooking spray
Directions
heat olive oil or spray in large skillet, add onion and cook - add 3/4 can of tomatoes and zucchini- stir, lay tilipia fillets on top of mixture and cover with remaining tomatoes, cover, bring to boil and cook until veggies are tender and fish is cooked through. (about ten minutes)I sprinkled with a small amount of parm cheese. makes four 2 cup servings
