Cheesy Vegetarian Sweet Potato with Beans

Ingredients
4 medium sweet potatoes, skins scrubbed1 cup chunky salsa 2 cups canned black beans, drained and rinsed1/2 cup shredded low-fat cheddar cheese
Directions
1. Pierce potatoes with a fork and cook in a 400F oven for approximately 45 minutes or microwave until tender.

2. Heat the salsa and black beans.

3. Once fully cooked, slice the potato length-wise, top with 2 tablespoons cheese and 3/4 cup black beans and salsa.

Makes 4 servings

    I eat this combo all of time. Try using Trader Joe's precooked lentils, some onion and red bell pepper sauted in olive oil and a touch f honey and cinnamon (just a touch)...Awesome! - 5/31/09

    This is a great lunch to make. Instead of cheese a use salsa for flavor and then add broccoli into the bean mix (or whatever vegetable I have on hand) to boost the nutrition even more. - 2/1/10

    Thanks for the recipe. I would not have thought of that combination. Will definitely try this as soon as I can get to the store but will slice the sweet potato on rounds and steam on top of the black beans as they heat. I like the texture better when steamed. Baking makes the potatoes mushy. - 3/23/09

    Are sweet potatoes and yams the same thing? Was wondering. This, by the way was very good. Filling. Another alternative per the Biggest Loser cookbook. cook potato, put laughing cow garlic and herb cheese in middle and serve. This way was much more of a meal. Yum - 12/28/10
