Ingredients
1/2 cup old-fashioned oatmeal, uncooked 1/2 cup canned pumpkin 1 cup water 1 pinch ground cardamom 1/4 teaspoon pumpkin pie spice 1 tablespoon Splenda sugar substitute

1Mix all ingredients.
2Cook over low heat for 20 minutes, or until thick.
3If you want something a bit creamier, use skim milk instead of water.
4For Vegan do not use milk.

    That is very pumpkin-y. I love the flavor of pumpkin but no so much eating pumpkin if that makes any sense. This is good, seasonal oatmeal though and it will definitely warm you up on a crisp autumn day. - 11/3/08

    It was good but next time I'll cook the oatmeal first, then add 1/4 cup pumpkin & spices. I also added raisins - 10/29/08

    I love this! I added a few (very few) raisins and walnuts and made it with milk. I've also recently discovered pumpkin quinoa! So creamy and delicious, you gotta try it! - 10/24/08
