Squash Fries

* Butternut Squash, 1 Med-Large * Kosher Salt, 2 tbsp
Makes 5 Equal Servings
Slice ends of the squash off.
Cut in half width wise, peel squash.
Cut in half length wise, scoop out seeds.
Cut into fry size pieces.
Press squash into a paper towel to absorb excess moisture.
On a sprayed cookie sheet, lay out squash fries.
Lightly coat squash fries with cooking spray and sprinkle an even layer of kosher salt over them.
Place in oven, bake for 20 minutes, flip, and bake for 20 more.
Serve with your favorite french fry fixins! Fixins are not included in nutrition information.
