I'm sure this would be lovely, but can I use unsweetened applesauce instead of a cup of oil? - 2/6/09

I was into the recipie when I realized that I did not have any baking powder. I omitted it and the bread was still amazing! This is the first zucchini bread I have ever enjoyed without butter. - 4/21/10

I made this recipe with 2 teasoons of cocoa powder and 1 cup of chocolate chips and it was great! I made it in small foil loaf pans and got 5 loafs out of this recipe! Great recipe! - 9/8/09

I skimped on sugar and oil and I messed it up. It was still ok. But I will just have to follow the recipe next time! - 8/16/09

Yummy. I made this one and added a little (1 tblsp) coco to the mix. I baked little mini loaves, my family really liked.
    I'll make this again. - 8/15/09

1 cup oil sure seems like a lot of oil to me. Can it be substituted with apple sauce. Anyone? - 6/5/11

This was great! I used closer to 3 cups (because of the size zucchini I had on hand). Will definitely make again! - 7/24/10
