Yam Risotto

Yams, 3 cup, cubes (remove)White Rice, short grain, 2 cup (remove)Chicken Broth, 7 cup (8 fl oz) (remove)Butter, salted, 1 tbsp (remove)Onions, raw, .5 medium (2-1/2" dia) (remove)Parmesan Cheese, grated, .33 cup (remove)Allspice, 1 tbsp (remove)Sage, ground, 1 tbsp
1. Simmer the yams in water until tender. Mash until very smooth.
2. Chop onion.
3. Heat butter in a large skillet. Add onion and cook until tender.
4. Add rice to pan and cook 2 minutes.
5. Add 1 cup of chicken broth and simmer until liquid is absorbed. Keep adding broth, one cup at a time, and cooking until absorbed until all broth is used.
6. Stir in yams, allspice, and sage and cook until blended and thick.
7. Stir in parmesan cheese and heat to blend.
8. Add salt and pepper to taste.
