Squash, Okra, and Tomatoes

Ingredients
1 large summer squash (aprox. 2 cups chopped)3/4 cup frozen okra1 can of diced tomatoes1 medium onion1 tbs Olive oil
Directions
saute onion, add squash and okra saute for 4 minutes. Add tomatoes. Season with Italian seasoning, salt, and pepper. Cook on medium heat for 1/2 hour. Makes 4 1 cup servings

    So GOOD! I used fresh okra, garden tomatoes, fresh yellow and zucchini squash, a clove of garlic, mushrooms, and shrimp. Served it over a bed of rice.

    I wasnt a huge fan of it, but I think it was because of the okra. It was my first time trying okra and I dont think I will be trying it again. I will probably make this again without the okra though. - 7/7/09
