Garlic New Potatoes

Ingredients
1 clove of garlic2 slices large red onion1/2 cup fresh parsley2 Tbsp Extra Virgin Olive Oil2 Cups Red Creamer PotatoesSalt Pepper
Directions
Mince the garlic, onion, and parsley and place in a heated skillet with the olive oil. Sautee briefly. Add approx 2 cups of diced small potatoes *I find the red creamer potoatoes to be best for this recipe*. Continue to brown the potatoes stirring periodically. Add salt & pepper to taste. Yields approximately 4-1/2 cup servings

    I made these tonight with white fish packets. They complimented one another and the leftover leek, mushrooms and peppers I put in the pan with the potatoes. Very easy to make and a nice way to prepare potatoes plus added veg very - 6/26/13
