2 cups organic white flour, 2 C whole wheat flour, 3 tsp baking powder, 1 tsp baking soda, .5 tsp salt, .5C sugar, 8Tbsp butter, 8Tbsp olive oil, 2large eggs(beaten), 3tsp vanilla extract, 1C lowfat buttermilk, whole can of Comstock no sugar added cherries (rinsed), 2tsp sugar, .5 egg white
Mix dry ingredients, cut in butter until crumbly. Mix wet ingredients (except cherries) in another bowl. Add mixed wet ingredients to dry then add cherries, mix by hand until dough is formed. Empty dough on to a lightly floured cutting board or sheet. Pat to 1" thick and cut into 2' rounds. Brush with egg white and sprinkle lightly with sugar. Bake at 375 degrees for 14 to 16 minutes until lightly golden and toothpick comes out clean. Servings 24
