Creamy Cheesy Veggie Chicken Soup

Ingredients
4 cups chopped broccoli (fresh or frozen)2 cups cauliflower (fresh or frozen)1 small onion chopped2 medium carrots sliced4 cups chicken broth2- 5oz cans chicken16oz Velveeta Cheese cubedCorn starch to thicken if you like (it is calculated for 1/8 cup)
Directions
I usually throw this in my slow cooker on high for 4-6 hours. Put everything in and wait for it to be down. But you could cook it on the stove top as well. The corn starch is optional but is calculated in calories. I serve with crusty french bread
