veggie black bean soup

Ingredients
1/2 Small onion, chopped1/2 cup chopped carrots1/2 cup chopped celery1 clove garlic, minced1/8 ntsp. freshly ground pepper2 cups vegetable broth2 cups fresh baby spinach1 (14 oz.) canned crushed tomatoes1 can garbonzo beans, rinsed and drained1 can black bean, rinsed and drained1 Tbsp. chopped fresh theyme (optional)
Directions
Coat large pan with nonstick cooking spray. Heat over medium heat. Add onion, carrots, celery, garlic and papper; cook 5 to 7 minutes, or until vegetables are tender.

Add broth, spinach, tomatoes, chickpeas and black beans; bring to boiling. Cover, reduce heat, and simmer 10 minutes. Serve topped with fresh thyme, if desired.
