Ziti with Garlic Roasted Cauliflower (Quick Simple Food)

1 large head cauliflower3 Tbs plus 1 Tbs EVOO4 garlic cloves, minced2 Tbs minced rosemary leaves1/2 tsp salt, plus more to taste1/4 tsp black pepper, plus more to taste1 lb whole wheat ziti, cooked al dente & drained1/3 Cup grated Parmesan cheese1 chicken breast, cubed and cooked w/ EVOO in skillet (optional)1/4 Cup fresh minced flat-leaf parsley
1) Cube chicken & saute in nonstick skillet. Set aside.
2) Preheat oven to 425. In large bowl, toss cauliflower with 3 Tbs of olive oil, garlic, rosemary, salt & pepper. Spread evenly in a shallow baking pan & roast, stirring occasionally, until golden & slightly charred, about 25-30 minutes.
3) Toss the hot pasta with the cauliflower, the remaining olive oil, Parmesan, parsley, chicken, and salt/pepper to taste. Serve immediately.
