Amish Baked Oatmeal

Ingredients
1 1/2 cups quick cooking oats1/2 cup sugar1/2 cup soy milk (or regular milk)1/4 butter1 egg (I used egg whites)3/4 tsp salt1 tsp vanilla
Directions
Combine all ingredients, mix well, spread in a greasted 9x13 pan. Bake at 350 for 25-30 min. or until edges are golden brown.
Serve alone or with milk/brownsugar.

    This was a heavy breakfast, very filling, but not a whole lot of flavor, but I think if you let it cool and maybe drizzle some icing or melted chocolate could be a great homemade granola bar - 9/18/08

    This was sooooo good.....the Amish really know how to cook. It is very filling and satisfying. We sprinkled a little cinnamon on top too, yum. On the 1/4 butter, you could use 1/4 Cup Canola Oil (healthier than butter) and I eliminated the salt. - 8/17/07
