36 Large Egg Whites2 packages of frozen peppers and onions (or two fresh green peppers and two fresh onions)One package of Turkey Bacon, chopped2 chopped shallots16oz mushrooms (fresh or canned).16oz Unsweetened Almond Breeze Original (or fat free half and half, but it will add carbs and more calories).Salt, Pepper, Turmeric powder, rosemary, and paprika.
Begin by draining thawed frozen vegetables. You want as much moisture gone as possible so your quiche isn't runny. Crack and separate the eggs. Chop the uncooked bacon (you can cook before hand to blot oil, but the difference is negligible and adds 30 minutes to prep). Combine egg whites and almond milk. Add the turkey or vegan bacon and mix. Add the rest of the ingredients and pour into 2 pie pans sprayed with pam. Cook for 1 hour if in pie pans, 1 hour 20 minutes if in one large caserole dish. Cool and enjoy. Works for all meals and stores well.
