Homemade Real Chunky Tomato Sauce

Ingredients
3 Tablespoons olive oil1 medium onion, chopped3 garlic cloves, minced4 cups chopped tomatoes (or canned)3 Tablespoons of chopped fresh parsley (or 1/2 that, dried)1 1/2 tsp. raw sugar to taste2 Tablespoons of chopped fresh oregano (or 1/2 that, dried)2 Tablespoons of chopped fresh basil (or 1/2 that, dried)1/2 tsp. dried thyme1/4 tsp. freshly ground black pepper (it really makes a difference)sea salt to taste
Directions
Saute onion and garlic in olive oil until soft.

Stir in tomatoes and bring to boil.

Add herbs and spices and simmer at least an hour until flavors are blended well, adding salt if needed until just right.

Let stand 5 minutes before using.

This makes about 6 cups of sauce, and most recipes take about 2 cups, so I usually freeze the rest in 2-cup containers for later.
