Southwestern Chicken dish

Ingredients
2 Tbs olive oil2 chicken breasts (boneless, skinless, and trimmed)1 white onion sliced and halved0.5 cup fresh cilantro chopped4 tomatoes quartered and halved2 cups frozen yellow corn2 Tbs hot sauce4cups cooked long grain white rice
Directions
cut chicken into 1 inch chunks and onions put into pan heated up with olive oil. Toss cilantro with chicken and cook till nearly done. Add the rest of the ingredients except rice. Simmer until tomatoes are softened. Add rice and heat up until heated through.
Makes 8 1cup servings.
