Stuffed Eggplant

Ingredients
1 EggplantsSalt and Pepper to tasteOnion- Chopped 0.25 cupBran Flakes- 2 tbsp crushedMushrooms- 0.25 cup ChoppedDried Parsley- 1 tbsp
Directions
Slice eggplat legnth wise and scoop the pulp into a seperate bowl

Chop pulp and sprinkle the salt over it and let it sit for 30 minutes

In skillet sautee everything but the thick eggplant shells

Place content in shells that are place in baking dish big enough.

Bake in 350 degree oven for 15 minutes- uncovered

I like to serve warm

    The filling was good, I added tomatoes and garlic cloves instead of the bran flakes like the reviewer before me, but after 15 minutes at 350 degrees the eggplant shell was still raw. I think you need a higher temperature. - 7/15/09

    this was very good. I did not add bran flakes and did add fresh chopped tomatoes, and about 4 fresh garlic cloves! very delish - 10/22/08
