6 oz Sweet Italian Turkey Sausage, crumble up1/4 c water (I sometimes prefer red wine)1 tsp olive oil1 lg onion, sliced into thin rings2 cloves minced garlic1/2 tsp dried basil (more if fresh)1tsp dried red pepper flakes (adjust to desired heat)16 oz canned whole tomatoes with juice, chopped15 oz can stewed tomatoes, Italian style2 cups red potatoes, med dice1/3 c chopped parsleySalt and pepper to taste
Brown sausage and drain.
Add water to loosen brown bits in pan.
Add oil, garlic, onion and simmer 5 mins.
Add all tomatoes, potatoes and seasonings. Heat to boil; reduce heat to medium, simmer covered 25 mins.
Test potatoes for doneness.
Add parsley and adjust seasonings.
Makes 4 hefty servings.
