Cider Pork Stew

Ingredients
2 lb. boneless pork tenderloin3 medium sweet potatoes (cubed)3 medium carrots (sliced into 1/2" pieces)1 cup chopped onion1 cup chopped apple1/2 cup chopped celery3 Tbsp quick cooking tapioca2 cups apple juice or cider1 tsp salt1 tsp black pepper1 tsp caraway seeds (optional)
Directions
Cut meat into 1 inch cubes.

Combine all ingredients in crock-pot.

Cover and cook on low for 10-12 hours.
