Carrot pancakes

Ingredients
1.75 cups nnfat milk2 TBLSP oil1 cup white flour1 cup whole wheat flour2 TBLSP baking soda.5 tsp salt.25 tsp cinnamon2 eggs4 peeled, chopped carrots4 TBLSP sugar
Directions
Made 22 pancakes for me--would depend on the size of your pancakes!

Get out the blender.

Blend the flour, milk, oil. Add baking powder and salt and eggs, blend again. Add a bit more milk if necessary to get the blender going. add the chopped carrots, cinnamon, sugar, blend til completely blended.

It will look orange, but you won't see carrot pieces at all. If it is too thin to make a pancake, add flour, if too thick, add a touch of milk.

Pam your pancake cooking griddles and cook the pancakes, I got 22 some small, some medium, some large.

They cook just like ordinary pancakes but are orange.

Eat with syrup, jam, powdered sugar, etc but count the added calories.
