Cauliflower Au Gratin - Sharp Microwave Carousel Cookbook

1/2 med. head cauliflower (seperated into flowerets)1 Tbsp. water1/2 Tbsp. margarine1/2 Tbsp. all-purpose flour1/4 cup milk1/2 tsp. dijon mustard1/8 tsp. salt1/4 cup shredded Cheddar cheese (about 1 ounce)Dash paprika
Place cauliflower and water in 1 quart casserole; cover. Microwave on HIGH (100%) until tender, 5 to 7 minutes, stirring after half the cooking time. Drain and set aside.
Place margarine in 2-cup measure. Microwave at HIGH (100%) until melted, 30 seconds to 1 minute. Stir in flour. Blend in milk, mustard and salt. Reduce power to MEDIUM-HIGH (70%). Microwave until thickened, 2 to 5 minutes, stirring every minute. Stir in cheese until melted. Pour over cauliflower; sprinkle with paprika.
