Cherry Almond Granola

1 cup packed brown sugar1/2 cup nonfat dry milk powder1/2 cup honey1/3 cup unsweetened apple juice concentrate*2 Tbsp. canola oil3 tsp. almond extract6 cups old-fashioned oats1 1/2 cup dried cherries or cranberries1 cup slivered almonds*do NOT use apple juice! You need to use apple juice concentrate. I have been unsuccessful in finding unsweetened apple juice concentrate, so I calculate the nutrition for sweetened apple juice concentrate.
Preheat oven to 375F. Ideally, prepare two baking sheets with parchment paper or you can spray with non-stick spray.
In a saucepan, combine the brown sugar, milk powder, honey, apple juice concentrate and oil.
Cook and stir over medium heat until the sugar is dissolved; stire in extract.
In a large bowl, combine the oats, cherries and dried fruit.
Drizzle in sugar mixture and mix well.
Spread a thin layer in two 15X10X1 inch baking pans.
Bake at 375F for 15-20 minutes or until golden brown, stirring occasionally.
IMPORTANT: Do not over bake the granola. The sugar content can cause the recipe to burn, so keep a watchful eye. Though the granola may not "appear" baked, it is. It will firm as the sugar cools.
Cool completely.
