Beans and Greens

Ingredients
1/2 lb pasta such as small shells or campanelle1 T olive oil1/2 cup diced onion2 cloves garlic minced1/4 - 1/2 t red pepper flakes2/3 bunch of kale or other braising greens, washed, stemmed and rough chopped1/2 cup chicken stock, water or white wine8 sun dried tomatoes, cut in strips and reconstituted in hot water1 can cannellini beanssalt and pepper to tasteromano or parmesan cheese to tasteDiced fresh tomato (optional)
Directions
Makes 4 servings

Cook pasta according to directions.

In large pan heat olive oil over medium-high heat. Saute onions, garlic and red pepper flakes for 2 minutes. Add the greens and 1/2 cup stock, water or wine. Cover and let cook down for about 5 minutes. Add sun-dried tomatoes and their liquid. Add beans. Stir well and season with salt and pepper. Serve atop hot pasta with cheese and diced fresh tomatoes.
