Spanish Omelet (Tortilla)

Ingredients
2 cups cubed potato, boiled5 eggs3 cloves garlic (or to taste)1 cup diced green peppersalt and pepper to taste7-10 green olives, sliced, for garnish
Directions
Beat eggs, then mix in cooked potato, garlic, green pepper, and salt and pepper. Spray an oven-safe dish with non-stick cooking spray. Pour in egg mixture.

Bake at 350 degrees for 25 to 30 minutes. Cut into wedges, cubes, or quarters.
