9 links sweet italian sausage - cooked4 links hot italian sausage - cooked1 zucchini1 onion.25 cup red pepper.25 cup green pepper1 large can diced tomatoes1 can Rotel7 cups cooked brown rice4 clove garlic
-Prepare vegetables as desired (slice, chop, etc)
-Slice cooked sausage
-Saute vegetables and sausage with garlic in fry pan sprayed with Pam, until tender and sausage is hot
-add diced tomatoes and Rotel, heat until boiling, simmer 5 minutes
-mix with cooked brown rice
Makes 14 (1 1/2 cup each) servings.
