Black Bean Fudge Brownies

• 5 tbsp semi-sweet chocolate chips • 1/2 cup(s) plain fat-free yogurt • 1 cup(s) canned black beans • 1 tsp vanilla extract • 1/8 cup(s) coffee, instant or regular, powder, (can use ground coffee instead of instant) • 1/4 cup(s) unsweetened cocoa • 1/2 tsp pumpkin pie spice • 1/8 tsp table salt • 1/4 cup(s) packed brown sugar • 2 large egg(s) • 1 cup(s) H-O Instant Oatmeal • 1/4 tsp baking soda • 1/4 tsp baking powder
Preheat oven to 350.
Spray baking pan.
Combine all ingredients and puree thoroughly (hand-blender or food processor)
Pour in pan and bake 35-45min.

These were very good, although I'm not sure I'd call them fudgy. I drained and rinsed my beans, which perhaps was the reason they weren't as fudgy. I used extra cocoa rather than coffee as I'm not a coffee fan. Will definitely make again!! (Reminded me of the flavor of no-bake cookies.) - 10/26/08

The brownies are good! I substituted the plain yogurt for a raspberry. I put about 1 tablespoon of dark chocolate syrup as well as upped the cocoa a tad, and it's fudgy for sure. Don't drain the beans, leave some H20 a top the beans. Slight aftertaste but not bad. Cals upped by 45 due to syrup.

I drained and rinsed and then added 1T water. Moist, but dense if that makes sense. I used 1T instant decaf and that was plenty strong. I should have mixed the chips in the blender as well because the sweetness was lacking in the non chip bites. Better when stored in the fridge. Needs tweaking. - 11/19/08

These were okay...I had to add more sugar because I found it the taste to be off a little. I also used organic quick oats instead of instant oatmeal. No one could tell that there were oats and beans in it! Sneaky way to be healthy!

I don't like spice in brownies, so I used about 2/3 tsp lemon extract along with the vanilla instead of pumpkin spice. I cooked these about 30 minutes the put the choc chips on top of the hot, cooked brownies. I didn't drain the beans, and used non-gluten oats. 9" x 13" pan for thin, fudginess. - 2/14/11
