1 Tablespoon Brummel & Brown1/2 cup onions sliced into thin wedges4 oz. turkey polska kielbasa, sliced into rounds1 Serrano Pepper, sliced1 medium red potato pre-cooked and diced1/2 cup Southwestern Egg Beaters1/4 cup Tillamook Italian Shredded Cheese1.5 ounces Avocado
1. Melt Brummel & Brown in a skillet, add onions and stir-fry until browned.
2. Add turkey polska kielbasa and stir fry until heated.
3. Add serrano pepper and red potato. At this point you may want to add some water to continue to heat food without having it stick to the pan. If you're using a non-stick pan, disregard.
4. When water is evaporated add egg beaters and scramble.
5. Remove from pan, split into two servings, top with cheese and avocado.
