Mom's Potato Kugel

Ingredients
6 baking potatoes, soaked and peeled1 onion1/3 cup all-purpose flour1/2 tbsp. salt (adjust to taste)Canola or vegetable oil (approx. 3 tbsp, to coat pan)
Directions
1. Preheat oven to 400F.
2. Place 9x13 Pyrex with oil on bottom in oven to heat up.
3. Peel and wash potatoes. Grate potatoes using grater or food processor.
4. Cut up and grate onion and mix together with grated potato.
5. Add flour and salt.
6. Pour mixture into pyrex with hot oil.
7. Sprinkle a bit of hot oil onto the top.
8. Bake uncovered at 400F for 1 hour, until well cooked and top/edges are golden brown and crispy.

Yield: 20 servings. Freezes well.
