8 small flour tortillas1/2 cup chopped mixed color peppers1 tablespoon olive oilcooking spray9 eggssea saltcracked black pepper
Makes 8 burritos, 1 burrito per serving
Warm tortilla's until soft
sautee pepper mix in olive oil
Beat eggs with wire whisk until thoroughly beaten
Add eggs to peppers and oil and scramble together
Toss in a little bit of sea salt and cracked black pepper to taste
Place 1/8 of egg mixture into each tortilla,
fold like a burrito and serve warm.
My husband loves to put tobasco sauce on his and my kids love cheese on theirs.
To make this lighter, feel free to use egg substitute, although this does alter the texture and flavor slightly.
