Turkey Caserole

Ingredients
1 lb Jenny O extra lean Turkey Breast3 cups chopped carrots {cut four pieces from round pieces}3 cups cubed YamsMrs Dash Seasoning Canola or Olive Oil Spray for bottom of pan
Directions
Cut and cube Yams - put on to lightly boil to soften and cut cooking time
Cut carrots and add to Yams bring to boil
Boil for another five minutes or so to soften
Spray bottom of casserole pan, put a layer of ground turkey on the bottom, then a layer of Yams and lastly a layer of carrots with a dash of Mrs Dash seasoning per your flavoring. Make a few layers. Cover with foil and cook in the oven at 350 for 2 hours. Serves 6 - about 1 cup each.

Serve with whole grain bread and you have a very healthy meal low in fat and high in fiber.

Please note: I love to cook this in a slow cooker on days I am very busy - I throw all of the ingrediants in the slow cooker raw, with a 1/2 cup of water on medium for about 4 - 5 hours.
