Runner's Oatmeal Blueberry Pancakes

Ingredients
Directions
1/2 cup oats1/2 cup fat free egg beaters or egg white equivalent1/2 cup fresh blueberries1 tablespoon honeyStevia (optional)
Place mix all ingredients in small bowl and blend using a stick blender or can be made in a food processor or stand blender. Mix only until berries slightly broken--2-3 pulses should be sufficient.
Let stand 5- 10 minutes to thicken!!! Can be made the night before and cooked in the morning!!!
Spray a non stick pan with non stick spray and heat before adding batter!!! Divide evenly into 3 pancake and cook throughly before attempting to turn!!! Cook evenly on both sides and cook even golden brown!!!
Top with favorite fruit, nuts or additional honey or maple syrup!!!
Make several batches and keep them in the freezer!!! Heat as needed!!!

I thought these were great. I only made two tiny changes. I used maple syrup instead of honey, just because I like the taste better and I added a pinch of baking powder because I like fluffier pancakes. I will be making these again as they taste really decadent with a tablespoon of maple syrup. - 5/26/09

I made these for myself and my five year old daughter (tough critic!). I omitted the honey from the batter, added a pinch of backing powder and a tsp of vanilla extract. My dtr LOVED them and said YUMMY the entire time she was eating. I also sub'd the blueberries for an organic 3 berry blend I had. - 8/27/09

Thanks for this idea, I would have never thought about it. I changed this recipe slightly to lower the calories even more. I used 1 tbsp of sugar free syrup instead of honey which is only 10 calories instead of 60. I didn't use any blueberries in mine so the entire batch was 220 cals! - 1/26/11
