Runner's Oatmeal Blueberry Pancakes

Ingredients
1/2 cup oats1/2 cup fat free egg beaters or egg white equivalent1/2 cup fresh blueberries1 tablespoon honeyStevia (optional)
Directions
Place mix all ingredients in small bowl and blend using a stick blender or can be made in a food processor or stand blender. Mix only until berries slightly broken--2-3 pulses should be sufficient.


Let stand 5- 10 minutes to thicken!!! Can be made the night before and cooked in the morning!!!



Spray a non stick pan with non stick spray and heat before adding batter!!! Divide evenly into 3 pancake and cook throughly before attempting to turn!!! Cook evenly on both sides and cook even golden brown!!!



Top with favorite fruit, nuts or additional honey or maple syrup!!!



Make several batches and keep them in the freezer!!! Heat as needed!!!

    I used this recipe as a way to make wheat free crust for pizza. Just 2 eggs and 1/2 cup of oatmeal. Spread out thin in a small frying pan after a spray of canola oil. This is enough to make 2 individuals pizzas where you can put on pizza sauce and toppings of choice. - 2/27/11

    I thought these were great. I only made two tiny changes. I used maple syrup instead of honey, just because I like the taste better and I added a pinch of baking powder because I like fluffier pancakes. I will be making these again as they taste really decadent with a tablespoon of maple syrup. - 5/26/09

    I made these for myself and my five year old daughter (tough critic!). I omitted the honey from the batter, added a pinch of backing powder and a tsp of vanilla extract. My dtr LOVED them and said YUMMY the entire time she was eating. I also sub'd the blueberries for an organic 3 berry blend I had. - 8/27/09

    Very tasty! Simple and quick recipe. I added 1/4 tsp of baking powder, a dash of cinnamon and used two whole eggsand maple syrup as suggested by others. Added a 5 walnuts to the batter with the fruit. Yielded three pancakes. Excellent after a morning run. - 8/15/11

    Do this, but add 1/2 cup low fat cottage cheese. Sounds a little crazy but makes them a little fluffy and adds protein. Just cook slower.

    Also, use a real egg. Come one, the yolks the healthiest part unless you have a serious problem with too much fat in the rest of your day - 9/5/13

    I mixed it up the night before and it was great the next morning! I did use maple syrup instead (my uncle makes his own so I want to use it any chance I get). I also used frozen blueberries (it's what I had) and they were still good. Would make them again.! - 5/12/11

    Thanks for this idea, I would have never thought about it. I changed this recipe slightly to lower the calories even more. I used 1 tbsp of sugar free syrup instead of honey which is only 10 calories instead of 60. I didn't use any blueberries in mine so the entire batch was 220 cals! - 1/26/11

    I love this recipe! This is now my "go-to" breakfast pancake. I also throw a few walnut pieces in for some crunch and walnuts are a healthy fat. I don't add any syrups or anything on top cause I love the taste as is. - 9/5/13

    You can add 1/2 cup cottage cheese to these (make sure you blend all ingredients) to up your protein.Make sure to add the calories to your tracker. You can also make with little cinnamon and vanilla and top with a splash of lemon juice and sprinkle of powder sugar. YUM! - 9/5/13
