Hearty Gormet Chicken Noodle Soup

-3 boneless skinless chicken breasts (or 1.5 lbs)-1 onion (chopped)-3 celery stalks (chopped)-about 18 baby carrots (chopped)-8 c. water-8 tsp chicken base-1 tablespoon parsley-2 c. egg noodles
-Heat the water in a large pot and add chicken base. While the broth is coming to a boil, start to cut the carrots, celery, and onion.
-When the water boils, add the chicken and cook for about 10-15 minutes or until it is cooked throughout. Finish cutting the veggies.
-Remove the pot from heat and let the chicken cool in the liquid for a few minutes.
-Transfer the chicken to a cutting board and return the broth to a simmer. Add the onions, carrots, and celery. Let the veggies simmer until they are slightly soft (10-15 minutes) while skimming away the foam that may form at the top of the stock.
-While the veggies are simmering, cut the chicken into small cubes or shred the chicken. Set the chicken aside.
-Once the veggies are slightly soft, add the cut up chicken, noodles, and parsley. Simmer until noodles are tender (about 5 minutes)
-Enjoy.
-This whole process takes an hour (prep time is included in cooking time if you follow the steps above)
-Serves 8 (1 serving=1 cup of soup)
