Whole Wheat Holiday Pumpkin Bread

Ingredients
3 cup whole wheat flour1/4 cup ground flaxseed1/4 cup oat bran1 tsp. baking powder2 tsp. baking soda1 tsp. cloves1 tsp. nutmeg1 tsp. cinnamon1/2 tsp. salt3 eggs, lightly beaten2 cups canned pumpkin1/2 cup unsweetened applesauce1/2 cup butter3 cups brown sugar (or date sugar)
Directions
Preheat oven to 350. In a medium bowl mix the dry ingredients together. Set aside. Combine the rest of the ingredients in a separate bowl and slowly mix the wet mixture into the dry ingredients. Bake for 50 minutes in two large well-greased pans.

    Smells wonderful while baking! I thought 3 c. sugar was outrageous, so cut it down to 1 c. packed dark brown suger. Also used olive oil instead of butter and added 1/2 c. chocoate chips. - 11/11/09

    I made this today, though I used 2c brown sugar instead and only had 2 eggs. A nice bread. Next time I might add some nuts - 4/11/09
