Potatoes and Mushrooms with Onion

Ingredients
1 potato - peeled and diced into 1 inch cubes10 small white mushrooms - halved1/4 white onion - separete in to rings or chop 1 tbsp olive oilSpices to tasteseasoning saltpepper garlic powder or 1 minced garlic clove
Directions
Throw everything into a large frying pan. Cover and cook on medium/low for 30 minutes or until the potatoes are soft. Stir often. There should be a small amount of juice in the bottom of the pan as it cooks. Add small amounts of water as needed if the juice is absorbed or cooks off.

Makes approximately 1 to 1 1/2 cups prepared (fills 1/3 or so of a dinner plate).
