Apricot Honey Mustard Fish

2 Cod fillets 4 oz each1 1/2 tablespoons Dijon honey mustard3 teaspoons apricot preserves1/3 teaspoon ginger
1. Preheat broiler.
2. Place fish fillets on a lightly greased broiler pan.
3. In a bowl, combine mustard, apricot preserves and ginger.
4. Broil fish for 5 minutes on each side, or just until done.
5. At the last cooking minute, pull fish and brush mustard mixture generously on each fish piece; return to broiler for a minute and out it comes with a pretty glaze on top! Don't let it stay there very long, or it will burn.
