Frozen Asparagus Stir-Fry,Bird's Eye one pkg (10 oz)Broccoli, frozen, 1/2 package (10 oz)Shrimp, 1 pound FrozenOnions, raw, 1 mediumGreen Onions, raw, 2 tbsp choppedTomato Sauce - No Salt added, 2-8 oz cansDiced Tomatoes - No Salt Added, 1-14.5 oz canOlive Oil, 1 tbspParsley, dried, 1 tspPepper, black, 1 tspPaprika, 1 tspGarlic, 1 tspOregano, ground, 1/2 tspThyme, ground, 1/2 tspPepper, red or cayenne, 1/3 tsp Whole grain instant brown rice - Uncle Bens Fast & Natural 4 C cooked
Thaw frozen shrimp in bowl of water in advance to making.
In a large skillet, saute onion and frozen veggies in olive oil until tender (thawed). Stir in tomato sauce, green onion, parsley and seasonings. Bring to a boil, reduce heat and simmer uncovered for 10 - 15 minutes or until slightly thickened. add shrimp and cook an additional 2-5 minutes Serve over rice.
