Tomato Basil Soup

6 Cups Crushed Tomatoes (Canned)3 Cups Chicken Broth (Canned)3 Cups Tomato Juice (Canned)20 Fresh Basil Leaves1/2 Cup Butter (1 stick)1 Cup Heavy Whipping Cream
Puree in small batches the first three ingredients in blender or food processor with 20 basil leaves. (this is important. you're after smooth soup)
Pour into a soup pot and simmer for 10 minutes.
Add:
1 cup heavy cream
1/2 cup butter (1 stick)
salt and pepper to taste
Heat through, being careful not to boil. Garnish with cheese or sour cream.
Makes 12.5 Servings
Serving Size 1 cup (8oz)
