Apple Spice Cake

3 large eggs 1/3 cup Apple Sauce1 cup Walnuts, chopped 3 Tbls Brown Sugar, unpacked1 boxed Spice Cake Mix1 cup water2 cups fresh Apples, chopped (firm baking apples, such as Granny Smith or MacKintosh)
Preheat oven to 350 degrees. Prepare 5 mini-loaf pans with butter cooking spray and set aside. Peel and chop 2 cups of apples (approx. 3-4 medium apples) set aside.
In a large bowl, beat cake mix, water, apple sauce and eggs until combined. Add chopped apples, stir to compine. Pour into prepared loaf pans.
In a separate bowl, combine walnuts and brown sugar, sprinkle over the top of each loaf pan.
Bake at 350 degrees for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Each loaf pan yields 5 slices for a total of 25 servings.

The only question I have is..when I look at the calories for this recipes it shows a low 154.6, however when I look at the "servings per recipe" it states 25! That must mean a VERY SMALL portion is the serving size? Is this correct? If so, I would be careful in how big a piece I took. - 10/27/08

The recipe makes 5 mini-loaves and 1 serving is 1/5 of a mini-loaf, definitely enough for breakfast with coffee or tea.

This recipe was awesome. Quick, easy and healthy too. Low in calories & fat great with a cup of tea for breakfast or in the evening. I think I'll try using egg beaters - just because that's what I have on hand. Great idea making small portions - I can freeze the small loaves for later use. - 10/25/08
