Gluten Free Peanut Butter Cookies

Ingredients
1 Cup Sugar1 Large Egg, Slightly Beaten1 Teaspoon Baking Soda1 Cup Peanut Butter (Smooth)
Directions
Preheat oven to 350 degrees
Combine all ingredients until smooth
Use medium cookie scoop and drop onto an ungreased cookie sheet
Use a fork to make a crisscross pattern on top of each cookie
Bake 10-15 minutes

    I make this same recipe but I call them 1,2,3 peanut butter cookies as they have 3 ingredients, 1 C. sugar, 1 C. PB, 1 egg. I do not use baking soda.

    Brown sugar makes them more chewy, white sugar makes them more crisp, and splenda makes them crumble. - 9/3/10

    I saw this recipe on Paula Deen's show except hers used Splenda and 1 tsp vanilla instead of baking soda so it is okay for diabetics. My mother (diabetic) loves them. - 1/24/08

    I've been making these for a few weeks now. I have never put baking soda in them though. Just the PB, sugar and 1 egg. Def take them out a little early cuz they are nasty if over cooked. My toddler love them and is allergic to diary. She actually helps me make these. - 9/18/08

    Easy to make and they taste good too! A little more on the crumbly side than regular PB cookies, but well worth it to have a homemade cookie that my son can eat! - 2/6/08

    This recipe is great! My cookies turned out just perfect. I didn't have the problem with the crumbling. I baked them 10 minutes then I left them on the cookie sheet a few minutes before moving them to a cooling rack.
