Cheddar muffins with Broccoli and Spinach

3 tblsp olive oil 4 scallion finally chopped1 clove garlic minced1 cup cooked finely chopped broccoli3/4 cup thawed frozen spinach, squeezed dry2 large egg whites3/4 cup low fat milk2 cups whole wheat flour1 packet sweetener1tbls baking powder1/2tsp dried dill1 cup shredded low fat cheddar cheese
10Preheat oven to 375 F.
2) line muffin pan with liners or spray with non stick spray
3)heat 1tbls oil in large skillet at scallions, garlic, broccoli and spinach then remove from heat.
4)Beat eggs and milk with rest of oil in a large bowl. then add flour, sweetener, baking powder and dill, stir until blended Add in veggies and cheese.
5)spoon into muffin tin about 2/3 full. bakeuntil browned 30-35 minutes
6) cool on a rack or serve warm.
