Tilapia, Veggies & Couscous in Tomato Base

Ingredients
Directions
1 medium sized onions (diced)1 sweet pepper (yellow or orange)1/2 cup of frozen corn3/4 cup of frozen peas & carrots1/2 cup of couscous6-8 oz of tilapia (diced 1"x1")1/2 cup chicken broth (sub with veggie broth if preferred)1.5 cup tomato sauce1 cup of waterSeasoningDash of paprika, garlic, cayenne pepper & basil (measure according to your taste)
Simmer chicken broth, add diced onions in a non-stick pan and bring to a boil. (Stove on med-high)
Stir in tomato sauce and add peppers, corn, peas & carrots. And bring to a simmer.
Add couscous, bring to a boil, add 1 cup of water, and lower heat to medium.
Cover for five minutes, (stir once in the middle so couscous won't stick)
Uncover let stand for two minutes and serve! (serves 4) ENJOY!!
