Not your mom's veggie soup!

Ingredients
* 7 cups prepared chicken bouillon (can sub in lower sodium)* 1 tsp black pepper* 1 celery stalk sliced* 1 small red potato diced* 1 small red onion** 1 can (1.5 cups) great northern beans** 1 can (1.5 cups) black beans** 1 small yellow squash diced** 1 small zucchini diced*** 1 tbsp fresh minced cilantro*** 1 jalapeno diced, no seeds*** 1 small tomato diced, no seeds
Directions
Precut everything and group in bowls according to the number of *'s. For instance, you'll start with the 7 cups of bouillon, celery, red potato and red onion in your soup pot.

Cook the first group until the potatoes and celery are tender, but not quite done.

Add the second group (**) and cook until the squash and zucchini are tender, but not quite done.

Add the third group (***) and ensure that the ingredients are all heated.

Makes 4-2 cup servings
