Meat Loaf Filled With Veggies

1 large onion 1 large carrot 1 large red bell pepper 1 bunch fresh spinach 1 large zucchini 4 cloves garlic1 1/2 cup stewed tomatoes 1 tsp pepper 1 tsp salt 1 tsp onion powder 1 tsp Italian seasoning 1/2 tsp pepper, red or cayenne 1/2 tsp cinnamon, ground 2 Tbsp barbecue sauce 2 lbs. lean ground beef 2 lbs. ground turkey breast meat (or pork or lamb, but add calories)2 eggs 2 cup wheat bran (can be part oat bran or flax seed meal)1 cup dry bread crumbs, grated
In food processor chop very, very small: Onion, carrot, red papper, spinach, zucchini, garlic and stewed tomatoes. Saute' in olive oil or spray olive oil until lightly golden. Add pepper, salt, onion powder, italian seasoning, cayenne, cinnamon and BBQ sauce. Refrigerate to cool.
In large bowl and with your hands, lightly mix cooled veggies, meats, eggs, bran and bread crumbs. Press into loaf pans or shape into loaf and cook in shallow baking dish like a 9x13 cake pan. Brush with more BBQ sauce or tomato sauce and bake 45 min at 375-degrees F or until it pulls away from side of pans. Drain fat off at least once while cooking.
Rest cooked meat 15 minutes at room temp before slicing.
