L.R. sweet potato muffins with flax and oat bran

Ingredients
1-1/3 cups oat bran1/3 cup ground flax seed1 cup whole wheat flour1-1/2 tsp. baking powder1/2 tsp. baking soda1-1/2 tsp. cinnamon1-1/2 tsp. ginger1/2 tsp. nutmeg1/2 tsp. salt2/3 cup brown sugar2 cups cooked mashed sweet potatoes2 T. oil1-1/3 cups buttermilk2 eggs1-1/2 tsp. vanilla3/4 cup pitted dates, chopped
Directions
Preheat oven to 400 degrees. Spray 24 muffin cups with non-stick spray. In a large bowl combine oat bran, flax, flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt and sugar. In a separate bowl, whisk together, sweet potatoes, oil, buttermilk, eggs and vanilla. Stir sweet potato mixture into dry ingredients junst until moistened. Stir in dates. Divide among 24 muffin cups. Bake for about 20 minutes or until done. Makes 24 servings.
