Apple Muffins

Ingredients
• 2 cups all-purpose flour • 2 teaspoons baking powder • 1/4 cup white sugar • 1/2 teaspoon ground cinnamon • 1/2 teaspoon salt • 1 cup milk • 1 egg, beaten • 1/4 cup butter, melted • 1 cup apple - peeled, cored and chopped
Directions
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
2. Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
3. Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

    I used half ww flour and half all purpose flour. I also used 1 tsp of cinnamon. The batter seemed really thick but they turned out great! - 2/6/10

    This was an easy recipe to follow. It was good and moist. I had cinnamon chips (like chocolate chips but cinnamon) that I added. Just helped to bring out the cinnamon flavor. They were really good. - 8/24/13

    The batter tasted a little bland and was really thick. I added about 1/4 cup more skim milk, a 1/4 cup of raisins, and 1 pack of lower sugar maple and brown sugar oatmeal. They were really good and I liked the addition of the oats. - 9/17/12

    i tried this with Stevia and did not peel my chopped apples. i agree about comments re blandness. but, I also wanted a sweeter muffin. I used unbleached flour, not realizing till later that the nut stats had ww flour, which i would have preferred. - 10/22/20

    I only had 1 cup of flour so I halfed the recipe but forgot to half the butter. I also grated the apples and added 1 cup to half the recipe. They came out great and that was the first time ever I made any sort of a muffin. They are much better than store bought. Thank you! - 3/21/15
