Pumpkin Blue Cheese pasta bake

Ingredients
200g whole wheat pasta1 cup of cooked, mashed pumpkin2tbsp pine nuts50 grams of blue cheese1tbsp thyme1tbsp extra virgin olive oil
Directions
Cook pasta and drain. Mix together pumpkin, seasoning and pasta in a dish, sprinkle with blue cheese and pine nuts. Bake until golden brown.

(we have added grilled plain chicken breast to this and it is fabulous!)

    I had to use cheddar cheese since i didnt have any time to get the blue cheese and i'm generally not a huge fan of it but this recipe was great!!
    It was so simple but had an amazing taste! Even with the cheddar! My friend loved it :) - 12/4/08
