Vegetable Stir Fry Rice

Ingredients
6 c. short to medium grain brown rice prepared1 tbsp extra virgin olive oil1 large onion2 c. sugar snap or snow peas2 c. bean sprouts1 c. sliced sweet red peppers1/2 c. chopped broccoli3 tbsp. low sodium soy sauce (more or less to taste)2 tbsp. Thai chili sauce (more or less to taste)
Directions
Prepare 6 c. brown rice according to directions

In a wok or large saute pan, add one tbsp. extra virgin olive oil and bring to medium-high heat.
Add onion and stir until softened, add broccoli, then peas and sprouts, and peppers last. Stir fry approx. 10-12 minutes, heating vegetables evenly.

Add chili sauce and soy sauce to mixture and cook through another 1-2 minutes.

Add rice 1 c. at a time to the vegetable mixture and stir fry on med. high heat. Add more or less chili sauce or soy sauce to taste.
