Flax Pancakes

- 1 egg - 3 T. flax seed meal - 1/2 t. baking powder - 1/2 t. vanilla - 1-2 packets splenda - cinnamon and/or nutmeg to taste
: Heat a skillet to medium heat.
Spray with PAM or similar.
Mix everything together and pour onto skillet.
Basically cook like a normal pancake.
You can top with sugar-free pancake syrup or SB friendly margarine like smart balance, if desired.
