2 oz Roasted Red Pepper2 Green Onion.5 lb lump crab meat1 cup cheese8 Mission White Corn Tortillas
Dice the peppers and onion and sauté until pepper starts to take on the "burnt" look. If not using lump crab, tear it up so it is small in size. throw crab in with peppers and onions. Heat up tortillas, place a few pinches of cheese on both sides of tortillas, put crab meat in tortillas. Flip tortillas, cooking on both sides until slightly blackened.
Makes 4 quesadillas, good for 2 people.
